Lemony Crab Salad
Ingredients:
1 pound cooked crab meat (picked through)
2 tablespoons fresh parsley
The juice from one large lemon (approximately 3 tablespoons)
2 1/2 tablespoons extra-virgin olive oil (EVOO)
About 8 cups of assorted baby greens (spinach, arugula, baby romaine,
etc.)
1/4 cup extra-virgin olive oil (EVOO)
Salt to taste
Directions:
In a glass or plastic bowl toss together crab meat, parsley, lemon juice
and 2 1/2 tablespoons EVOO and combine.
In another bowl toss greens with remaining EVOO and salt to taste. Divide
into four servings and mound crab meat mixture on greens. Additional parsley and/or lemon zest can be used as
garnish, leaving you with a beautiful and healthy crab salad recipe that you can turn to, without guilt, time
