Cooking Alaskan King Crab Potato Salad

Ingredients:

  • One (1) pound small red-skinned Potatoes
  • One-fourth (1/4) teaspoon Salt
  • One (1) cup Alaskan King CrabMeat
  • Three (3) Scallions (white part only), finely sliced
  • Two (2) tablespoon Parsley, finely sliced
  • One-fourth (1/4) teaspoon Lemon Zest, grated
  • One (1) tablespoon Olive Oil
  • Two (2) teaspoon Lemon Juice, fresh
  • One (1) ground Pepper, fresh
  • One (1) Lettuce, shredded
  • One (1) Cucumber, sliced

Directions:

  1. Prepare the potatoes. Cut them into four. Do not peel. Let it boil for 10 to 15 minutes or until the potatoes can be pricked. When cooked, let it drain and put it on a mixing bowl. Set aside and let it cool for a few minutes.
  2. Mix the crab meat, lemon zest, scallions and parsley in a serving dish. Toss it gently to avoid breaking the meat. Add the potatoes, olive oil and fresh lemon juice. Put fresh ground pepper to taste.
  3. Makes 4 servings
