Cooking King Crab Legs and Lobster Tails (Smoked)

Ingredients:

  • Chunks of apple (alder wood)
  • One (1) cup of Margarine (melted)
  • Fourteen (14) cups of lemon juice, fresh
  • One (1) tbsp. of Minced fresh parsley
  • Twelve (12) tsp. of grated lemon rinds
  • One (1) pinch of Salt
  • Five (5) lbs. of frozen king crab legs, thawed
  • Four (4) frozen lobster tails weighing about two (2) pounds, thawed

Directions:

  1. Immerse the apple chunks (alder wood) in water for about thirty minutes.
  2. Prepare your charcoal blaze in a smoker. Allow it to burn for fifteen to twenty minutes, then draw off the chips and put them on your coals. Have the water pan positioned in the smoker. Include water to fill the line.
  3. Include the butter and the next four constituents, and stir them together. Split in half the mixture of lemon-butter so the first half will be used to brush the crab and lobster and the other half set aside for the moment.
