Ingredients:
- One (1) pound of Small red-skinned potatoes
- One-fourth (1/4) teaspoon of Salt
- One (1) cup of King crab meat
- Three (3) finely chopped scallions’ white parts
- Two (2) tbsp. of Finely-chopped parsley
- One-fourth (1/4) teaspoon Lemon zest in grated form
- One (1) tablespoon of Olive Oil
- Two (2) tablespoons of Fresh lemon juice
- Pepper, freshly-ground
- Shredded Iceberg lettuce
- Cucumber, sliced
Directions:

Incise the red-skinned potatoes with their skins intact. Heat the potatoes in boiling water for about
fifteen minutes or till they can be pierced easily with a knife’s tip.

Drain the potatoes and relocate them to a mixing bowl or container. Position in the crab meat, the
scallions, parsley and grated lemon zest. To combine the ingredients, utilize a fork to toss.

Include lemon juice plus oil for your potatoes to be covered. Seasoned pepper to flavour.

On your bed of shredded lettuce serve the crab salad on it and surround some sliced cucumbers.
