Ingredients:
- 500 grams of crab
meat.
- 3 large fresh
avocados
- 1 semi large onion, finely diced.
- 500 grams of vegetarian
stock.
- 250 grams of low
fat cream.
- Dollop of low fat
butter.
- 20 grams of all-purpose
flour.
- Sprinkle of
garlic.
- Salt and pepper, to
taste.
Instructions for Avocado and Crab Meat
Soup:
Mix the Avocado and crab
meat.
Fry the onion until cooked well.
Add the garlic, flour, vegetarian stock and whisk a
lot.
Add the mixture of crab and
avocado and cook for nearly half an hour.
Throw in salt, pepper and finally the cream to taste.
