Ingredients:
- One (1) teaspoon
salt
- One eight (1/8) cayenne
pepper
- One (1) teaspoon dry
mustard
- Two (2) teaspoon Worcestershire
sauce
- Two (2) egg yolks,
beaten
- Cooking oil
- One pound (1) flaked crab
meat
- One (1) teaspoon parsley
flakes
- One half (1/2) cup bread
crumbs
- One half (1/2) cup
flour
- One fourth (1/4) cup melted
butter
Preparation:

Mix together crab
meat, salt, butter, cayenne, parsley, mustard,
Worcestershire sauce, breadcrumbs and egg yolk in a bowl.

Put in refrigerator and take out after
a few hours. The mixture should be hard enough to be
molded.

Form crab
balls around the size of a large coin. This should make around 35 balls. Proceed to coat with
flour.

Heat the cooking
oil in a pan and fry the balls. Place in plates covered in paper napkins to take out any excess
oil. Serve immediately.
This dish can be
served with rice or by itself. This can feed around seven people each getting five pieces. This is a very
good dish and could be eaten as appetizers or as side dishes to
meals.
