Crab Stuffed Potatoes

 

Ingredients: 

 

  • One fourth (1/4) cup margarine or butter 
  • Four (4) medium baking potatoes 
  • One (1) teaspoon salt 
  • One fourth (1/4) teaspoon pepper 
  • One fourth (1/4) cup light cream 
  • One fourth (1/4) chopped green onions or chives (finely cut) 
  • One (contains around six ounces) (1) can crabmeat flaked; with cartilages removed. 
  • Paprika 

  

Preparation: 

 

  1. Bake the potatoes for 44-55 minutes at 425 degrees Fahrenheit or until tender. Let cool. 
  2. Cut the potatoes in half lengthwise. Scoop out some of the insides into a bowl to create a thin shell. 
  3. Mash the potato pulps with cream, butter and salt and pepper until smooth. 
  4. Add the onions and cheese to the mashed potatoes. Mix in the crab. 
  5.  Stuff the shells with the mashed potatoes if they were a bowl. 
  6. Sprinkle the top with Paprika. 
  7. Put back in the oven and leave in for fifteen minutes or until the dish is heated. 

This is a great side dish. It has a creamy texture that seems to melt on your tongue. The crab, onion and cheese give this mashed potato dish an added flare. Everyone will love this dish.
