Cream of Crab Meat

  

Ingredients: 

 

  • One (1) cup of boiling water  
  • One (1) pound of Crab meat  
  • One fourth (¼) cup chopped onion  
  • Three (3) tablespoons of flour  
  • One (1) cup of butter  
  • One fourth (1/4) cup chopped onion  
  • One fourth (1/4) teaspoon celery salt  
  • One (1) Chicken bouillon cube  
  • One (1) teaspoon salt  
  • A dash of pepper  
  • One (1) quart milk  
  • Chopped parsley  

 

Procedure: 

 

  1. Drop the chicken bouillon cube in water and stir until it has dissolved.  
  2. Take a pan and sauté the onions in butter until it becomes tender then blend in the flour, salt, celery salt and pepper.  
  3. Slowly add the milk and bouillon. Stir well until it becomes thick.  
  4. Add the crab meat and heat until desired.  
  5. Pour into a bowl and garnish it with parsley. Serve immediately.  

This dish will serve around six people. Alter the quantity to fit your needs. This makes a good appetizer or a nice treat on a particularly cold day. This dish goes well with other sea foods.
