Crab Salad

 

Ingredients: 

 

·        Two (2) teaspoons of lemon juice

·        Sixteen (16) ounces of crab meat

·        A half (1/2) a teaspoon of old bay seasoning.

·        One (1) tablespoon of finely chopped parsley

·        Three fourths (3/4) cup of finely sliced celery

·        Three fourths (3/4) cup of mayonnaise

·        One (1) cantaloupe (optional for aesthetic purposes only)


Preparation: 

 

  1. Prepare a medium sized bowl. Mix the parsley, mayonnaise, seasoning and lemon juice together. Add the celery and crab after the prior ingredients have blended well. Mix thoroughly.  
  2. Refrigerate until time of serving.  
  3. For aesthetic purposes, cut a cantaloupe in half, take out the seeds and fill it with crab salad as if it was a bowl. Cut the bottom of the cantaloupe in such a way that it can stand.  

  

This meal would make a great appetizer at formal dinners or a celebration at home. The number of batches you can make is only limited to your refrigerator space because It is quick and easy to do. It is also nice for a healthy snack for the people who are on the go.
